Date and Oat Bars

These bars are interestingly soft and moor-ish and the perfect energy pick me up! This is another recipe I found when looking for healthy but tasty treats, and again is from Deliciously Ella. However I have slightly adapted the recipe. They are a healthy variation of a flapjack and contain only natural sugars and fats which is hard to believe when you're eating them!

Makes 20 bars | 10 minute prep time | 35 minute cooking time

Ingredients

450g oats

20 medjool dates (400g)

300ml water

200g raisins

50g sunflower seeds

50g pumpkiseeds

5 tbsp coconut oil

2 tsp cinnamon

Method

  1. Start by pre-heating the oven to 200C and lining a 6x9 inch baking tray with baking paper.

  2. Then, pit the dates and place them in a saucepan with the coconut oil. Allow the dates and coconut oil to melt for about five minutes – until the dates are nice and soft.

  3. Next, place the dates and coconut oil into a blender with the water and blend until a smooth paste forms.

  4. Add the oats, sunflower and pumpkin seeds, raisins and cinnamon to a mixing bowl and stir in the date mix.

  5. Pour the granola bar mix into it the baking tray and spread it evenly across.

  6. Place the tray in the oven for about 35 minutes, until the top turns golden. At this point take the tray out of the oven and leave it to cool and set for about 15 minutes, before cutting it into bars.

  7. Store the bars in an airtight container at room temperature.
